I am by no means a good cook. I LOVE to bake, but for for some odd reason, I am TERRIBLE at baking cookies. Maybe it’s because I always try to substitute healthy ingredients in for bad ones, like avocado in place of butter or applesauce for oil. Then, I’m always left wondering why my cookies are green and flat. But, long story short, here is where I will post any recipes I find worth sharing!

Pistachio Encrusted Salmon

2 filets of salmon

1/2 c. brown sugar

1/2 c. shelled pistachios

Cooking Spray or oil/butter

Sesame Broccoli

1 lb. fresh cut broccoli

1 tbsp. reduced-sodium soy sauce

1 tbsp. honey (you can reduce this if you’d like. I just love honey)

2 teaspoons olive oil

2 teaspoons balsamic vinegar

sesame seeds for topping

Combine your ingredients (minus the sesame seeds) and pour over broccoli. You can either put broccoli on a baking sheet covered in foil or in a round baking dish. Bake at 400 degrees for 20 minutes and top with sesame seeds. Enjoy!

Blueberry Protein Pancakes (this is for ONE serving)

1/4 c. rolled oats

1/4 c. whole wheat flour

1/4 c. milk (I used almond coconut milk)

1 egg white

1 tbsp. of honey

cinnamon (as much as you like…. I tend to be heavy-handed when I use cinnamon)

1 tbsp. of peanut butter or a nut butter of your choice (this is optional)

As many fresh blueberries as you’d like! I think these would also be good with a banana mashed in

Mix all the ingredients together in a medium bowl. Pour contents onto hot skillet. Makes 2-3 pancakes
